  1. Raw material selection

First, we select pineapples that are free of disease and rot to ensure the quality of the finished product.

2. Cleaning

The selected pineapples enter the cleaning stage, which is usually washed multiple times by soaking, spraying and brushing to remove mud, pesticide residues and other impurities on the surface.

3. Peeling and core removal

After washing, the pineapple is processed by an automated or semi-automated peeling machine to remove the rough outer skin. Afterwards, the core removal machine removes the core, which is hard and affects the taste.

4. Slicing or dicing:

After peeling and core removal, the pineapple is cut into slices or cubes to facilitate the subsequent juicing process.

5. Juicing

The cut pineapple is squeezed through a screw juicer to obtain pineapple juice. In order to increase the juice yield, enzymatic hydrolysis technology may be used to decompose pectin, making the juice easier to precipitate.

6. Filtration and adjustment

The squeezed pineapple juice may contain impurities such as pulp debris, so it needs to be filtered to make the juice clearer. At the same time, the factory will adjust the sugar content, acidity and solid content of the juice according to product standards to ensure consistent flavor.

7. Sterilization

In order to extend the shelf life of pineapple juice, pasteurization or ultra-high temperature instantaneous sterilization (UHT) technology is usually used. Pasteurization is usually carried out at around 85°C for 30 seconds, while UHT sterilization can be heated above 135°C for 2-3 seconds, effectively killing microorganisms while maintaining nutrition and flavor.

8. Filling

The sterilized pineapple juice immediately enters the aseptic filling machine and is filled into glass bottles, PET plastic bottles or Tetra Pak cartons under a sterile environment to prevent secondary contamination. After filling, the bottle mouth is sealed and labeled with production date, shelf life and other information.
